Elaine Chu is a Registered Dietitian and the Director, Food Services Transformation & Strategic Projects with Fraser Health in BC. With over 20 years of experience in healthcare food service system, Elaine sees every meal as an opportunity to make a positive difference in someone’s day, whether through nourishment, dignity, comfort, or a sense of normalcy during a vulnerable time. That belief continues to guide her work and shapes how she approaches system design, decision making, and leadership. Elaine enjoys turning dreams in actions. Her areas of interest include using technology to improve process flow and service quality, advancing culinary medicine, embedding sustainability in hospital food service, and fostering meaningful cross sector collaboration.
